  • 2 mediumPlum tomatoes, diced
  • 1 mediumAvocado, diced
  • 1/2 cupFeta cheese, reduced fat, crumbled (or cheese of choice)
  • 5 cupsChopped romaine lettuce
  • Optional: Salt and pepper to taste
