Gluten Free Waffles

Ingredients

  • 1 cup rice flour, brown or white
  • 1⁄2 cup potato starch, not potato flour
  • 1⁄4 cup tapioca flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1⁄4 cup oil
  • 2 egg, optional (see notes)
  • 1 1⁄2 cup buttermilk, or regular milk
  • 1 tsp sugar

Directions

  1. Mix all ingredients together with a whisk. If batter is too thick, add a bit more milk. If it’s too thin, add a little rice flour.
  2. Cook in batches in a waffle maker.
  3. Note: these can be made without eggs – just add a little more liquid to make up for them.
